One Dish – Enchiladas Divorciadas
Gulf Gate’s Kolucan has some creative Mexican dishes on its menu!
Let’s start with this. My Spanish es no bueno (I’m actually not even certain that phrase is correct!).
It’s no fault of Señora Regalado’s, that’s for sure! She was my high school Spanish teacher.
I’m sure Señora did the best job she could with me. She was a WAY better Spanish teacher than I was a Spanish student. That much is now painfully obvious.
Navigating your way through an American menu of Spanish or Mexican dishes, thankfully, doesn’t require any formal linguistics training. It’s pretty simple.
Even if you can’t identify the dishes by name, they are almost always fully described in English. So, if you can read English, you’ve got this pretty much hacked.
➡️ This brings us to Enchiladas Divorciadas.
OK, yes, there are questions. At least there are for me. It all comes down to two intriguing options.
1️⃣ Is this the dish that causes your divorcio?
OR
2️⃣ Is this the dish that you eat when you’ve just been shown the door?
If you stop and consider it even for a moment, you will quickly come to the conclusion that these are two very different things.
In option one, something goes horribly wrong, and your lunch/dinner, for some unforeseen reason, causes irreparable marital strife. Bad situation. 🙁
In option two, you’re eating a delicious Mexican dish to help ease the pain and sorrow of a love that’s lost. 📝 In some situations, option two could actually be a reason to celebrate. In this case, tequila is a more than appropriate accompaniment to the enchiladas! 🥃
There IS a third and decidedly less dramatic option than the two listed above. You could just treat yourself (and that special someone) to a savory and tasty Mexican dish and not worry about the reason. This sounds like the BEST one of the three!
I wanted to write about Kolucan when they flung open their doors back in the fall of 2023. But there was already SO MUCH buzz about this new spot. It didn’t seem like I needed to pile on.
But the dust has settled a bit now, and the vision of upscale Mexican cuisine, held by Chef Gino Calleja and his Reyna’s Taqueria partner, Jose Rojas, has taken hold in the Gulf Gate neighborhood.
Those enchiladas don’t appear like they could end a relationship, do they? No, they certainly do not!
They’re described as: house-made corn tortillas with pulled chicken with red and green sauces, queso fresco, and crema, served with charro beans and Mexican rice.
I like how the green and red sauces are separated on the plate. It creates a little mix-and-match situation for the eater. I enjoy both of those styles of sauce, so this was perfect.
I also loved the way that the sides are served with this dish. Being presented in separate bowls lets you taste each of those things individually instead of being all jumbled up with the main dish.
📝 No, I’m not one of those people who hates when things are all mixed together on a plate. (I know it kind of sounds like that!) I LOVE a good open-faced turkey sandwich or Korean Bibimbap. Bring it on!
So, we’ve learned a little something here today.
First, my Spanish is not nearly up to snuff. (I’d like to think that I’ll work on it, but…) Second, if you should visit Kolukan and order the Enchiladas Divorciadas, you can do so without any concern about its impact on your personal life!
