Over at Cork on St. Armands Circle, a dining experience experiment is taking place. Well, at least an experiment for Sarasota dining. Chef Jeff Trefry has announced what he is calling the “Chef’s Table”. It is a four course guided culinary journey. The special menu will be available each Wednesday through Friday evening in the Cork upstairs dining room. The Chef’s Table is being billed as an “Interactive Culinary Experience”. For the cost of $49.95 per person or $69.95 per person with paired wines, diners can enjoy a meal that highlights the interplay between food, wine and creativity.
The meal which consists of four smaller plate courses will feature vibrant combinations, personalized service and interaction with the chef. It is being touted as a true foodie experience. Here’s what you can expect in the way of dishes. The meal will start with a tomato and fennel salad with an orange mint vinaigrette and served with a black pepper and goat cheese crostini. The second course will feature a Pan-Seared Diver Sea Scallop served over a bed of micro greens and sliced avocado, with a Tequila lime butter sauce. Next up, a Grilled Medallion of Tenderloin, seared and accompanied by a braised portobello and red wine shallot demi-glace. And finally, Pastry Chef Heidi Nelson presents the Cork brulee sampler.
It sounds like it should be a wonderful meal. Hopefully, I’ll have the opportunity to give it a try in the next couple of weeks and report back.
