It’s that time of year once again. Summer is close and soon Farmer’s Markets and farm stands will be stocked to the gills with all kinds of delicious fresh fruits and vegetables.
Sometimes you run into things at those stands or markets that look fantastic, but, you really have no idea what to do with them. Check out the fresh beets above. They looked great, but, cooking with them is not an everyday thing for me. So instead of buying a bunch and trying to figure out what to do with them once I got home, I just took a few photos and left the cooking for someone with a clue!

Mache can be hard to find, so you may omit it and just use arugula, but it adds a great nutty flavor if you can find it.

Fresh beets go well with green apples. Cooking them down with onion and fresh herbs make a great gazpacho. Topping it off with something like lemon yogurt.
Also you could freeze your beets to save for a winter soup or pickle your beets.
Beets are great in a slaw as well with oranges and carrots.
